Reasons to love this recipe

Muesli bars are a great snack to have at home or take on the go. While they can be healthy, store bought ones rarely are. They often contain sulphite preservatives, artificial sweeteners and seed oils.

These homemade muesli bars taste so much better than anything off the shelf, and contain only natural ingredients. They're satisfying and delicious. The recipe can be altered by using different nuts, seeds and dried fruits - or no dried fruit at all for a lower sugar option. Just stick to 3.5 cups of total dry ingredients.

Ingredients

Wet Ingredients
  • 120 g (1/2 cup) natural, smooth peanut butter (or other natural nut butter)
  • 175 g (1/2 cup) honey
Dry Ingredients (3.5 cups total)
  • 175 g (1 1/2 cups) rolled oats
  • 160 g (1 cup) sultanas
  • 25 g (1/4 cup) desiccated coconut
  • 80 g (1/2 cup) chopped almonds
  • 40 g (1/4 cup) pumpkin seeds
  • 2 tbsp white sesame seeds
  • 1/8 tsp salt
  • 1/2 tsp cinnamon

Directions

Step 1: Combine all dry ingredients in a mixing bowl

Step 2: Pour honey and peanut butter into a pot and mix together over medium heat until combined. Lower the heat and cook for another 4-5 minutes, stirring constantly, until a thick caramel-like sauce forms.

Step 3: Immediately add the sauce to the dry ingredients and combine them using a wooden spoon. Keep going until all dry ingredients are coated. Some elbow-grease is required.

Step 4: Line a 20-25cm square dish with baking paper. Pour in the mixture and spread it evenly. Use a piece of baking paper to smooth and even out with your hands.

Step 5: Refrigerate for two hours to set.

Step 6: Once set, cut into 10 bars and enjoy! Bring to room temperature before consuming if they are too hard straight out of the fridge.

Keep for up to two weeks stored in the fridge.
